  1. Cook rice until 70% done. Drain and set aside.
  2. Sauté onions, add ginger-garlic paste, then tomatoes and spices.
  3. Add vegetables and yogurt, cook until tender.
  4. Layer rice and vegetable mix in a pot. Top with mint, coriander, and saffron milk.
  5. Cover and cook on low heat for 15 minutes.
  6. Serve hot with raita.
