Vegetable Biryani

Ingredients
- 1 cup basmati rice
- 1 cup mixed vegetables (carrot, beans, peas)
- 1 onion (sliced)
- 1 tomato (chopped)
- 1 tbsp ginger-garlic paste
- 1 tsp biryani masala
- 1/2 tsp turmeric
- 2 tbsp yogurt
- Mint and coriander leaves
- Saffron soaked in milk (optional)
- Oil or ghee
Steps
- Cook rice until 70% done. Drain and set aside.
- Sauté onions, add ginger-garlic paste, then tomatoes and spices.
- Add vegetables and yogurt, cook until tender.
- Layer rice and vegetable mix in a pot. Top with mint, coriander, and saffron milk.
- Cover and cook on low heat for 15 minutes.
- Serve hot with raita.
