Steps

  1. Roast semolina lightly and let it cool.
  2. Prepare tempering with mustard seeds, dals, green chili, and add to semolina.
  3. Mix in yogurt, salt, and baking soda. Let batter rest for 15 minutes.
  4. Pour into idli molds and steam for 10–12 minutes.
  5. Serve with coconut chutney and sambar.
