  1. Roast eggplants over flame until skin is charred. Peel and mash.
  2. Heat oil, add cumin seeds, then sauté onions and ginger-garlic paste.
  3. Add tomatoes, green chili, and spices. Cook until soft.
  4. Add mashed eggplant and mix well. Cook for 5–7 minutes.
  5. Garnish with coriander and serve with roti.
