Baingan Bharta

Ingredients
- 2 large eggplants
- 1 onion (chopped)
- 2 tomatoes (chopped)
- 1 tbsp ginger-garlic paste
- 1 green chili (chopped)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- Salt to taste
- Oil for cooking
- Coriander leaves
Steps
- Roast eggplants over flame until skin is charred. Peel and mash.
- Heat oil, add cumin seeds, then sauté onions and ginger-garlic paste.
- Add tomatoes, green chili, and spices. Cook until soft.
- Add mashed eggplant and mix well. Cook for 5–7 minutes.
- Garnish with coriander and serve with roti.
